What's For Dinner?

Tummy rumbles....

Tonight Menu: Creamy Mushroom and Spinach Pasta

Serves: 6

What You'll Need:
1 - 12 oz Cream of Mushroom
3 tbsp of minced garlic 
16 oz fresh mushroom
6 oz of spinach, fresh
1 lb pasta
salt and pepper
2 tbsp olive oil
1/2 cup of parmesan cheese

Preparation: 

Chicken
Preheat oven to 325 degrees.
Meanwhile, over a medium heat and in a non stick skillet, olive oil and a few splashes of soy sauce.
Once well heated, pan sear the exterior of chicken breasts. 
Once exterior of chicken is browned, add a 1/4 cup of chicken broth in a deep casserole dish.
Place seared chicken breasts inside and cover with foil.
Place in oven for 45 min, then reduce temperature to 220 degrees and allow to cook for an additional 30 minutes.
Remove from oven.

Mushroom Pasta
In a deep skillet, stir in cream of mushroom soup and a splash of chicken broth. 
Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 2 minutes. 
Stir in the spinach, mushrooms, minced garlic, cheese and pepper. 
Cook for 1-2 minutes or until spinach is wilted.
Remove from heat.
Cook pasta according to package directions. Drain, stir in pasta.

Plate and serve.
