What’s For Dinner | Recipe: “Fajita” Burgers (Tex-Mex Week)

It's Tex-Mex Week here on Ms. Naturally Random and we're going to keep it going but first let's recap yesterday's: Chicken Burrito Bowls.

Today's post was inspired by the desire to use a new kitchen toy. At some point earlier this year I realized that all of my skillets were non-stick. This is a really frustrating predicament to have.

What’s For Dinner??

Tonight's Menu: Grilled “Fajita” Burgers

What You’ll Need: 
1 pound ground turkey or beef
3/4 cup chopped fresh cilantro, divided
1 onion (sliced)
2 green pepper (sliced in strips)
2 teaspoons minced garlic
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon salt

NOTE: if you don't have the dried spices on hand use McCormick Chipotle Pepper Marinade. It's just a tasty!

Other Toppings
4 Rolls, toasted
Tomato slices
4 Slices of Monterey Jack or Pepper Jack cheese

If you're really feeling fancy, add this sauce to dress your burger:
1/3 cup reduced-fat mayonnaise
1 tablespoon lime juice
1 tablespoon chopped chipotle chiles 

1. Preheat grill to medium-high.
2. Place beef, 1/4 cup cilantro, onion, garlic, chili powder, cumin, oregano, pepper and salt in a large bowl. Combine until evenly incorporated. Form into 4 equal patties, about 1/2 inch thick and oval-shaped to match the rolls.

NOTE: If using McCormick Marinade (in lieu of spices), follow package instructions by adding measured water and oil to your beef, mixing and allowing to sit before forming into patties.

3. Oil your grill pan. Grill the burgers until browned, about 5 minutes per side. Adjust if you like medium-rare, I prefer medium-well. Grab a plate and set aside
4. Toss sliced onions and peppers into grill pan and wait until onions are translucent and peppers soften.
5. Assemble the burgers on toasted rolls with the chipotle mayonnaise, grilled green peppers and onions.

*Feeling Fancy Step Combine the remaining 1/2 cup cilantro, mayonnaise, lime juice and chipotle in a small bowl and set aside.
