RANDOM KINDA KETO PERSONAL 30 DAY CHALLENGE - WEEK 1 UPDATE
If you are looking for inspiration to create a weekly keto-friendly meal plan, you're in the right place! Today's post features a 7-day meal plan featuring easy dinners for a family of three.
This week, I really tried to keep the rules for the challenge intact. I opted to use a few things I've used in the past when I've focused on creating a habitual eating lifestyle.
First is IF. IF stands for intermittent fasting and is an eating pattern that cycles between periods of fasting and eating. I have never been much of an early morning eater. It is a rare occasion that I sense hunger before 10am. Previously, I've used the IF model 16:8 for my eating regimen. This means, I fast for 16 hours (sleep hours included) and eat within an 8-hour window. Due to my daughter's sleep time, we typically have dinner at 7pm. I set my eating hours for 12pm to 8pm. Having rules, in general, works for me.
Second is OMAD. OMAD stands for one meal a day. This may seem extreme but for week one of the 30-Day challenge, I wanted to make sure my head was completely in the game. I wanted to see if I could make it one week sticking to a stricter rule. For the most part, I did it! For the first week, OMAD coupled with IF made my fast even longer, 23:1. Dinner still wrapped up at 8pm and I curbed late night snacking by choosing to not eat post dinner.
What I Eat In A Week
In addition to challenging myself mentally, I wanted to challenge myself in the kitchen as well. I developed a meal plan for the week to make dinner both easy and appetizing. Now, I have no problem eating the same thing every day (as you could tell from my previous "What I eat in a week" video). I generally cook enough to have leftovers. I'm not a cook everyday type of girl. For the first week of the challenge, I decided to eat something different every day. Eating once a day will make you really look forward to dinner, so I wanted to make sure I could be excited about it every day.
Monday: Keto Lasagna
My Keto Lasagna features zucchini sliced thinly layered in a meat-heavy sauce, peppers and five kinds of cheese.
Tuesday: Beef Tacos #TacoTuesday
Who can say no to tacos?! I used organic grass fed ground beef, jalapeños, tomatoes, and avocado. Also, the La Banderita™ Low Carb Tortillas used total at 5g of NET CARBS.
Wednesday: Wings & Greens #WingWednesday
Another favorite, oven-baked chicken wings. Super simple weeknight meal created by using the leftover tomato and avocado from #TacoTuesday for a tasty salad.
Thursday: Chili Lime Shrimp & Cauli-Mash
Trader Joe's Chili Lime Seasoning saves the day! Pan-seared shrimp on a bed of sweet peppers and onions (watch your portion size of those two vegetables, if you're strict keto) with a side of cheesy cauliflower mash.

Sunday: Breakfast for Dinner #Brinner
Be a winner, eat some brinner. Breakfast for Dinner was an easy choice. Here are a three-egg spinach omelet and two pork sausages. I promise I cook better than this though. #WhooooChilay I overcooked those eggs that day. Still ate it though!
This isn't Keto In The Streets and that's okay. Adjustments were made. I am definitely sure this Burger Bowl featuring pepperoni chips, sauteed mushroom, onions, and jalapeño popper did not disappoint.
